Dark chocolate mousse

Method

  1. Melt the chocolate over a bain-marie, then let it cool for 5 minutes.

  2. Separate the eggs. Stir the yolks one at a time into the melted chocolate.

  3. Whisk the whites with the salt to firm peaks, adding the sugar at the end.

  4. Loosen the chocolate with a third of the whites, then gently fold in the rest with a spatula, lifting the mixture.
